GF DF Blueberry Pancake Recipe š¤¤š„ā ā
Save this post for some THICK, grain and dairy-free yumminess to make on a lazy Sunday morning.ā ā

Here is what you'll need pretty humans:ā ā
1 Cup of Grain-Free Flour of Choice ( I used finely ground Almond flourā ā
1/4 Cup Maca Powderā ā
1 Tsp of GF Baking Powder ( can make without for slightly less thick pancakes)ā ā
5 Large Eggs (Yes, forreal, 5 Eggs, trust me)ā ā
1/3 Cup Milk of choice (I'm using hemp but coconut or oat milks are also recommended since they are pretty creamy)ā ā
1/4 Cup Coconut Oil ( Olive or Avocado Oil works too)ā ā
2-3 TBSP of Coconut Sugarā ā
1 1/2 TSP Maple Syrup ā ā
1 Tsp Nutmegā ā
1-2 Cups of Blueberries ( Optional, and depending on your personal preference of blueberry/ pancake ratio)ā ā
1/4 Tsp Pink Himalayan or Sea Salt ( Also optional but I recommend it)ā ā

Directions: ā ā
1. Lightly coat your pan with oil of choice (I used coconut) and set to med-low heatā ā
ā ā
2. Whisk your eggs then your remaining ingredients ( I like to pour in all my liquids first then add the solids) until you get a smooth but thick batter consistency ā ā
ā ā
3. Scoop into your heated pan using your 1/3 cupā ā
ā ā
4. Cook on each side 1-3minutes eachā ā
ā ā
Top with vanilla bean ghee or butter of choice, maple syrup, cacao nibs and more blueberries if you like and Enjoy!ā ā

These super satisfied my craving for a sweet but healthier version of a fan favorite šā ā
